Majorred flag right there as side quests were all just as good or better than the main quests. Assassins Creed Origins has side quests that you should play purely
ProbablyOdyssey. Origins looks good too, but Valhalla is a little grey. Origins has the best story, and is more narrative driven than the others. If you've never played an Assassin's Creed game before, Odyssey will probably be your best bet. It's the least Assassin's Creed-y, but that won't bother newcomers.

Most importantly, 90% of Valhalla's side content involves samey, annoying puzzles of door locks/fire jars ad nauseum.
